The harder way, would involve pulling both axleshafts, the driveshaft, and then the differential, because the "cover" is your axle beam. I vote for the first one.

I just got the basic 80-90W gear oil, about 5 quarts. (just for rear to start with). I dont want to mess with it until I know I have the right stuff.
Typically GL5 75W-90 or 75W-140 (heavy duty use) gear oil. If you have a limited slip diff you may need the friction modifier additive depending on the gear oil. If I remember correctly I used just over 4 quarts of royal purple 75w-90. Get some rtv gasket maker put a good bead around the plate and put it on, let the gasket sealer set for a few mins before fully tightening.
