300ish hours of DS3 so far, never used Sellsword Twinblades. The only tip I can really give is go for the head. Run away from his AOE attack that he spams, then run in after a second (there’s a space you can run through) and punish the head. When he does his jaw snap, and when he does the claw swipes. Punish after those, and only bother with the head. Try and stay in front of him.
