None, really. If you want an OP elemental rapier, use the uninfused Chaos Rapier with Charcoal Pine Resin. Rapiers are best off as uninfused weapons. The base damage+scaling+140/120 counter rating+leo ring (12,5% counter boost) is very powerful. The Estoc will serve you fine for the PvE game. However if you are looking into having Faith buffs on your weapons then Estoc might not be the way to go. The Estoc is very poke-heavy in PvP, and buffs don't last long enough for a poke war usually. +15 is always the best upgrade for most weapons in my experience in pve. not so sure about pvp. +15 always gave me the most damage especially with scaling. since I always go dex build, and I'll mostly go for uchigatana, +15 did a lot more damage than a +5 lightning uchi, because it scaled better. but maybe its a specific scenario that doesn't apply to much else?
